It originated in the late Ming and early Qing dynasties. It is named because its color, shape and taste are similar to lychees. Legend has it that it is related to Mei Fei in the Tang Dynasty or Baoshan, the royal chef in the late Qing Dynasty, but there is no conclusion. The main ingredient is lean pork, often served with water chestnuts (horse hooves). To make it, you need to cut the pork into cross-cuts, fry it and curl it up like lychee skin, color it with red rice grains, fry it with water chestnuts, and finally stir-fry it quickly with sugar, vinegar, soy sauce, etc. to make a sweet and sour sauce. The finished dish is bright red in color, crispy on the outside and tender on the inside, sweet and sour. This dish was selected into the "Top Ten Famous Dishes of Fuzhou" in 2016, and will be included in the Fujian Cuisine Protection List in 2021. Lychee meat is not only a home-cooked delicacy for festivals, but also embodies the characteristics of Fujian cuisineโs heavy knife skills and sweet and sour taste.
